Tell us how you prepared your Happy Eggs.

I fried them in olive oil over-easy. They were delicious! The whites were fluffy, and the yolks a nice deep yellow-orange.

It makes me feel much better about eating their product. It’s important to me that the food I eat is as similar as possible to wild-foraged food.

The Holidays are coming! What festive dish would you use Happy Eggs for?

A
They would make a great Frittata, which I’d take over to my mom’s on Christmas morning! She grew up on a farm, so she would love that they’re called Happy Eggs.

What’s your favorite Holiday memory?

A
Christmas when I was 4 years old. I can’t believe they pulled it off, but my parents wrapped up a huge toy chest, and as I was about to unwrap it, it moves and I heard a tiny bark – there was a puppy inside!
Cooking with Happy Eggs makes me smile – before, during, and after eating them.
