Tell us how you prepared your Happy Eggs.

Took advantage of a clear, crisp autumn day and happily prepared our happy eggs in a campfire — “hobo” style, a family favorite. I swear the yolks of these luscious, brown eggs looked strong … they were thick and as ‘meaty’ of an egg as you’ll ever see … as I cracked them into the mess of potatoes, Lil Smokies, cheese, garlic and ksp sitting in my tinfoil bowl. A hunk of butter and more foil until the “hobo” dish is sealed nice and tight, then whomp toss it straight into the fire. Poke it, prod it, flip it a few times and listen to that sizzle and smell that garlic. About 10 minutes later remove your scramble, cool and enjoy in the great outdoors.

We will use Happy Eggs for deviled eggs and casseroles on winter holiday mornings!

What’s your favorite Holiday memory?

A
They all sort of blend together but I would say in general every Christmas morning as a child. The anticipation, the smell of the tree and glow of the lights on a quiet Christmas morning coming out to the grand reveal. Pure family joy.
