Tell us how you prepared your Happy Eggs.

A
We prepared egg drop soup with our Happy Eggs. Our daughter loves getting egg drop soup from our local Chinese restaurant, but we are concerned with what additional ingredients are added and also how long the soup has sat before being served. The simple recipe we use tasted fresh compared to restaurant soup and knowing exactly what ingredients were used in our recipe made us more confident in the healthiness of our dish.

How do you feel about The Happy Egg Co.’s commitment to hen welfare?

Having grown up working on my grandmother’s farm during the summer, I know that there is a difference between store bought eggs and free range chicken eggs. Happy Eggs remind me of the eggs I personally got from the hen house (sometimes not so easily) when I was young. I believe Happy Eggs are on the same level of quality as fresh eggs straight from the hen house.

The Holidays are coming! What festive dish would you use Happy Eggs for?

A
We cannot wait to use Happy Eggs in our gingerbread cookies. Our son has been waiting to bake some and we cannot wait to see how they turn out using these eggs.

What’s your favorite Holiday memory?

A
Our family’s favorite memory is cutting down our own Christmas tree at the tree farm in West Virginia. I will always remember the experience of walking up the side of the mountain and selecting the perfect tree with my family. The cool mountain air combined with the hot cider and freshly baked goods make this my favorite holiday memory.
