Gregory on the Colors of Heritage Breed Shells
I was really surprised after opening the carton. The colors of both eggs were vibrant and a nice change from the white eggs I’m used to eating. This is the first time I’ve eaten blue or brown speckled eggs so I cooked some as soon as I got home!
What He Thought of the Rich Amber Yolk. . .
Surprisingly, the yolk was definitely a different color, not quite amber but not the standard yellow, either. That said, they looked healthy and definitely a step above standard, commodity eggs.
His Thoughts on Heritage Breed’s Distinct Flavor
These eggs definitely carry an earthier, more robust taste and texture compared to standard commodity eggs. I hard boiled six eggs and cooked three over-easy, served over hash browns and wheat toast, to get the full flavor of the yolks once broken open. I saved the other three for later this week!
