David on the Colors of Heritage Breed Shells
These colors were very unique; it almost feels like I’m out on the ranch and the eggs are not being tampered with. The speckling on these eggs look amazing. This is the first time I’ve bought eggs of this kind. The eggs tasted great, with the yolk being very orange, so I cooked them not fully to taste the richness of a runny yolk.
What He Thought of the Rich Amber Yolk. . .
The yolk has a strong color. For someone like myself who has bought other eggs before from different brands, these yolks look healthy and rich. This changed my mind in what kind of eggs I’m getting. I was very surprised by the color; it’s the way eggs naturally look. It makes me wonder what I’ve been eating before.
His Thoughts on Heritage Breed’s Distinct Flavor
The flavor of the egg felt very natural; the color of the yolk is very strong and bright. All chefs would want this kind of eggs to enhance the taste and the visual experience that they can bring to the table. The color of the yolks can make any food presentation excellent. I made a soft boiled egg and cracked it open, with the yolk still running, with a little dash of pepper and salt garnished with some chopped chives. It tasted great!
