Eggs The Way They Should Be

In Partnership with Happy Egg Co.

We talked to Stephen from NV and here’s what he had to say:

Q
What’s your favorite way to prepare Happy Eggs?

A
My favorite way to use eggs is in French toast. It gives the custard like mouthfeel and flavor needed to make the French toast shine.
Q
The new year is the perfect time to try new things. What Happy Egg Co. recipe will you try?

A
I would try the rocky sunrise bacon and egg burger. I like to be adventurous with my burgers and a sunny side up egg or over easy egg makes a burger that much more enjoyable. An egg brings richness in the other flavors and allows more moisture into the dish.
Q
Happy Egg Hens are pasture raised with over 8 acres of outdoor space to run + play. What do you think of Happy Eggs high animal welfare standards?

A
I think it’s great that the hens are cage less and have land to roam free. Treating the animal better leads to a better product.
Q
What do you think of Happy Egg’s choice to raise their hens on small family farms, in support of family farmers?

A
I believe small businesses and farms are the way to go. This country has gotten too commercialized with the way it operates and we need to go back to our roots.
I think it’s a great company with an equally respectable product.
